Vegetable Biryani & Mango Chutney with Indian Butter Tofu

The ingredients required for this recipe are 1 onion, 1 carrot, ⅓ cup basmati rice, 4 garlic cloves, 1 jalapeño, 14.5 oz crushed tomatoes, 4 oz green beans, 5.5 oz coconut milk, 14 oz organic extra firm tofu, 1 tbsp vegan butter, ¼ cup mango chutney, 1½ tsp curry powder, 1 tsp turbinado sugar, 1 oz fresh ginger, 1 tsp vegetable oil, and Salt and pepper, as per taste.
The tools that are used during the process are Blender, Large skillet with lid, and a Small saucepan with lid.
The instructions to make this recipe are pretty simple. Just start with the biryani, as it is the main dish and might take more time than other siders. Take the carrot and peel it. Also, dice it equally in small pieces. Put the peeled and diced onions as well. Heat it up with 1 tsp vegetable oil in a small saucepan in medium or high heat. Add to this the diced carrot and only half of the diced onions. Cook this entire mixture for 3 to 5 minutes until it softens. Now add basmati rice to this vessel, a cup of water and a bit of salt. Bring this mixture to a boil, cover it up, and reduce the heat to a low flame. Cook this until the water is absorbed properly and rice becomes tender, in about 13 to 15 minutes.
Now it is time to do the preparation of the vegetables. Firstly, peel the garlic and slice it small. Also, take ginger and peel it. Mince the ginger appropriately. Take the jalapeno now and trim and dice it. Make sure you deseed the jalapeno in the process too. Chop green beans too, into about ¼ inch thick round pieces. The tofu can be drained now and cut into cubes of 1-inch each. fu and cut into 1-inch cubes.
Next, you have to sauté the given aromatics. Just take a large skillet and melt the butter in it. Do this over medium to high heat. Add on onions that were diced before. Sprinkle salt over this and cook it up. Keep stirring occasionally till it is browned properly, for about 6 to 8 minutes. Add minced ginger, curry powder, sliced garlic, pepper and a bit of salt. Now cook for 1 minute till a great fragrance comes. Add tomatoes to this and reduce the heat to a real low. Now cook sauce for 5 to 7 minutes till it thickens slightly.
Then, you have to blend the ingredients and simmer it. Wait for the sauce to thicken and once done, transfer the mixture to the blender. Now you can add the turbinado sugar and coconut milk, and start the blending process. Keep blending until the mixture is really smooth. Now you can put the sauce back to the skillet and sprinkle it with salt and pepper. This is the time when you have to add the cubed tofu. Now stir it in a gentle way and bring it to a simmer. Make sure that the heat is medium and the vessel is covered. Cook for 3 to 5 minutes till the tofu is hot. The tofu needs to be hot to blend in with the dish.
So, now it is time to finish up the main dish, biryani. Just add on the sliced green beans and diced jalapeños to the already-cooked rice. Now check the biryani with a fork to make sure that it is well-mixed. A completely combined biryani will have everything evenly distributed. Now divide the biryani among large bowls or plates.
