1. Avocado Salad

Ingredients:

1 medium cucumber

4 tablespoon boiled sprouted moong

1/2 onion

4 pooris

1/2 tablespoon green chutney

1/2 teaspoon black salt

1/2 teaspoon chaat masala

1/2 avocados

1/2 potato

4 tablespoon American corn kernels

1/2 baby lettuce

2 tablespoon lemon juice

1 and 1/2 tablespoon mango chutney

1/4 teaspoon salt

1 tablespoon sev

 

Step 1:- Start by cutting all the vegetables separately. Take a large bowl, place chopped cucumber, potatoes, and onions in it. Toss the bowl well to mix the ingredients. Put the boiled shoots and corn in the bowl. Mix well with a spoon.

Step 2:- Now add the chopped lettuce to the bowl. Slightly press the pooris with your hand and place it in a bowl. Pour lemon juice, green chutney and mango chutney over the salad. Toss the bowl well to mix the ingredients.

Step 3:- Season well with black salt, chaat masala, and salt. Add the Avacado slices and add to salad. Mix the ingredients well. Sprinkle with chopped coriander leaves and serve

 

2. Strawberry Balsamic Bruschetta

Strawberry Balsamic Bruschetta

Ingredients:

1 baguette, cut into 1″ slices

1/4 Cup plus 2 tsp. extra-virgin olive oil, divided

2 Cup ricotta

2 tsp. kosher salt

1 tsp. Freshly ground black pepper

2 Cup strawberries, chopped

2 tbsp. fresh basil, thinly sliced

Balsamic glaze, for serving

 

Step 1:- Preheat the oven to 400 °.

Step 2:- Place the baguette slices on a tray of medium sheets and sprinkle or sprinkle with 1/4 cup of olive oil. Bake until the bread is fried, about 10 minutes.

Step 3:- In a medium saucepan, add the ricotta and salt, pepper, and two teaspoons of oil. Spread each bean liberally with a mixture of ricotta and top with strawberries.

Step 4:- Sprinkle with basil and fill with balsamic glaze. Serve.

 

3. Corn Salsa with Tortilla Chips

Ingredients:

For the Salsa

5 yellow corn, husks removed

2 tbsp extra-virgin olive oil

1 tbsp kosher salt

1 ripe avocado, chopped

1 Cup grape tomatoes

1/2 red onion, finely chopped

1 cup sliced basil

For the Dressing

1/4 Cup extra-virgin olive oil

1/3 cup lime juice

1 clove garlic, minced

1 tsp red chilli flakes

1 tbsp Kosher salt

 

Step 1:- Brush corn with oil and season with salt. Grill for 8 minutes, or until the kernels begin to char.

Step 2:- Let cool slightly, then slice the kernels off the corn with a knife.

Step 3:- In a large bowl combine corn, avocado, tomatoes, onion and basil.

Step 4:- In a medium bowl, combine oil, lime, garlic, and red pepper flakes. Season with salt and whisk until smooth. Pour mixture over the salsa and stir until ingredients are fully coated.

Serve with tortilla chips.

Ingredients:

1 medium watermelon, cut into 1″ cubes

1 Cup basil leaves

1/2 medium red onion, diced large

200gms of feta, cut into 1″ cubes

1 Cucumber, cut into half moons

Balsamic glaze, for drizzling

 

Step 1:- Assemble skewers by layering watermelon, basil, red onion, feta, and cucumber. Place skewers onto a serving platter.

Step 2:- Drizzle all over with balsamic glaze.
